Cognac distillation: the art of turning wine into liquid gold

Introduction: Where science meets craftsmanship

Behind every glass of Cognac lies a fascinating, age-old, almost alchemical process: distillation. It is what transforms an ordinary white wine—acidic, low in alcohol—into an eau-de-vie of extraordinary aromatic complexity. Understanding Cognac distillation is to understand the very soul of this exceptional beverage.

Step 1: The base wine, a humble starting point

It all begins in the Charente vineyards, with a discreet grape variety: Ugni Blanc (also known as Trebbiano in Italy). This grape produces a wine that is naturally acidic, not very fruity, low in alcohol—between 7 and 9% ABV—and frankly unpleasant to drink on its own.

But it is precisely this acidity and aromatic neutrality that make it the ideal raw material for distillation. Ugni Blanc is a blank canvas on which time and fire will paint wonders.

The harvest takes place in September-October. The wine is quickly vinified, without added sulfur, and must be distilled before March 31st following the harvest—this is a legal requirement for the Cognac appellation.

Step 2: The Charentais still, the heart of the process

Cognac distillation is governed by strict specifications: it must be carried out by double distillation, in a Charentais pot still, made of copper, heated over an open flame.

The Charentais still is a functional work of art. It consists of several key elements:

  • The boiler: the copper vessel where the wine is heated. Its capacity is limited to a maximum of 30 hectoliters by regulation.
  • The capital: the dome that caps the boiler and captures the alcohol vapors. Its shape—onion-shaped, turban-shaped, or olive-shaped—subtly influences the aromas.
  • The swan neck: the long, curved tube that conducts the vapors to the condenser. Its name perfectly evokes its elegant silhouette.
  • The coil: the spiral tube immersed in a cold water bath (the wine heater), where the vapors condense and become liquid again.
  • The wine heater: an ingenious preheater—the cold wine waiting to be distilled circulates around the coil, warming up on contact with the vapors, thereby saving energy.

Copper is not an arbitrary choice: it fixes undesirable sulfur compounds present in the wine, contributing to the purity and finesse of the distillate.

Step 3: The first distillation — the "brouillis"

The wine is loaded into the boiler and gradually heated. Alcohol, more volatile than water, evaporates first. The vapors rise, pass through the capital, slide along the swan neck, and condense in the coil.

This first pass yields what is called the brouillis: a cloudy, milky liquid, with an alcohol content of between 27 and 32% ABV. It still contains many impurities and lacks character. It is only an intermediate step.

A heating session lasts approximately 8 to 12 hours. The distiller carefully monitors the temperature, flow rate, and density of the distillate. It is a job done both day and night, dictated by fire and the senses.

Step 4: The second distillation — the "bonne chauffe" (good heating)

This is where the magic truly happens. The brouillis is reloaded into the boiler for a second distillation, called the bonne chauffe.

But this time, the distiller must demonstrate exceptional skill: he must cut the distillate into three distinct fractions.

The heads

The first vapors to emerge from the coil are the heads: rich in light alcohols (methanol, acetaldehyde), they are acrid, harsh, and must be discarded. The distiller collects them separately—they will be redistilled or eliminated.

The heart

Next comes the heart: the noble fraction, the one that is kept. It is a crystal-clear liquid, with an alcohol content of between 68 and 72% ABV, of remarkable purity and finesse. It concentrates the best aromas of the wine: white flowers, fresh fruit, slightly spicy notes.

The duration of the heart cut is a crucial decision. Too short, and precious aromas are lost. Too long, and heavy compounds that weigh down the distillate are allowed in. It is the experience of the master distiller—sometimes passed down through generations—that guides this choice.

The tails (or secondes)

At the end of distillation come the tails: heavier, less alcoholic, with earthy and greasy notes. They are also separated from the heart, but often reintroduced into the next brouillis so that nothing is wasted.

Step 5: After distillation — the new eau-de-vie

Upon leaving the still, the eau-de-vie is as clear as spring water. It has an alcohol content of approximately 70% ABV and releases intense, almost raw aromas. It is lively, powerful, and promising.

It is at this stage that it enters the cellars to begin its long life in oak barrels. But that is another story—that of aging, which is just as fascinating.

Protected and transmitted expertise

The distillation of Cognac is supervised by the Bureau National Interprofessionnel du Cognac (BNIC), which ensures compliance with the appellation's specifications. Every detail—the type of still, the capacity of the boiler, the distillation dates, the alcoholic strength—is regulated.

This strict framework is not a constraint: it is a guarantee. The guarantee that every bottle of Cognac is the result of an authentic, controlled process that respects a centuries-old tradition.

In a world where everything is accelerating, Cognac distillation reminds us that there are still skills that cannot be delegated to a machine. Learned gestures, sharpened senses, infinite patience. This is the art of Cognac.
